Lazy Salsa and Guacamole Dip

Yeah I called it a lazy guacomole dip because instead of making a tomato salsa and the guacamole separately I combined the 2 into 1 dip.  Had it with my bag of organic blue corn chips. Delicious!

Recipe (yields about 1 1/2 cup)

  • 2 ripe medium avocadoes, soft parts scooped up and mashed
  • 1 medium ripe tomato (deseeded) diced
  • 1 lime (about 2 tbp of juice)
  • 2 tbp of chopped cilantro
  • 1/2 spanish red onion, diced
  • a small pip of garlic minced
  • 4-5 jalapeno rings chopped finely (you can increase or reduce depending on how hot you want it to be)
  • salt , pepper to taste
  • 1 tbp of olive oil
  • (optional) 1 generous spoonful of sour cream

Mixed them all up and well! Serve chilled or immediately

    • Dear Lea, you can find Jalapenos in a section where they sell mexican foodstuffs. Or substitute with fresh green chillies chopped up or just omit it altogether.
